White Chocolate Martini

Ho Ho Ho, it must be Christmas time, because the White Chocolate Martini's are flowing.

Every year we put on a Christmas Party and every guest is greeted with a welcome drink.  We tried these a few years ago and they were a massive hit, and have become our staple welcome drink at Christmas.

They are very easy to make, creamy, delicious and very festive.

White Chocolate Martini

1oz Vanilla Vodka or Whipping Cream Vodka
1oz White Creme De Cacao
1oz Heavy Cream or Whipping Cream

Mix all ingredients in a martini shaker until the outside is frosty.
Pour into martini glass.
Garnish with shaved chocolate.

Pomegranate Margarita


On a recent trip to Mexico we discover this great treat that makes the best Pomegranate Margaritas -- Pomegranate Tequila.   And I could not wait to get home to make up a batch or two.

Pomegranate Tequilia

Pomegranate Margarita

Ingredients 


  • 1 cup tequila (Pomegranate if you are lucky enough to get your hands on some)
  • 1 cup triple sec
  • 1/4 cup confectioners' sugar
  • 4 cups ice
  • 1 cup pomegranate juice
  • 1 cup fresh lime juice

Directions

Pour the tequila and triple sec into a pitcher. Sprinkle in the confectioners' sugar, and stir to dissolve. Add the ice, and pour in the pomegranate juice and lime juice. Stir to mix, then serve. You can add more tequila to taste if you're a professional.


You can sugar coat the rim if you desire and garnish with a lime wedge




This summer I also discovered the best idea ever...........Mason Jar Frozen Margaritas

Pretty much the same, except, no ice or blender needed.


Mason Jar Frozen Pomegranate Margarita

Ingredients 


  • 1 cup tequila (Pomegranate if you are lucky enough to get your hands on some)
  • 1 cup triple sec
  • 1/4 cup confectioners' sugar
  • 1 cup pomegranate juice
  • 1 cup fresh lime juice 

Directions

Put all ingredients in a picture.  
Stril until the sugar is dissolved.
Pour in mason jars and cover with lids.
Put in freezer and wait for them to freeze up.

NOTE:  they will not freeze completely, they will be nice and slushy.



 Best thing ever, is you can make a large batch and have a freezer full, so they are ready whenever you want one to enjoy, or when unexpected company comes over, you have ready made cocktails.

Healthy Banana Milkhake Smoothie

This is truly the best tasting smoothie you will ever come across - it tastes just like a banana milkshake.




Healthy Banana Milkshake Smoothie
1 banana
1/4 cup Coconut milk beverage (unsweetened)
1/4 cup greek yogurt
1 teaspoon xylitol
1/2 teaspoon vanilla
1 bottle Bio-K - optional (probiotic)
ice



Put everything in the blender and blend!
Pour in glass and enjoy!!












It is that simple and a great breakfast drink.

Quick Iced Coffee

OK, this summer I have become obsessed with iced coffee.  However, in the morning I don't always have time to bring out the blender and blend up a nice batch, as I am usually running behind schedule.


So, I have come up with a equal delicious option that is the Quick Method!

Check it out, this is all you need.


I freeze the coffee in ice cube trays,


Fill my glass (or travel mug) with the coffee cubes


Top off with either almond milk or coconut milk beverage, add your sweetener of choice and you are done!



So my freezer in now filled with the coffee cubes so I am ready to go at a moments notice.

I bring it to work in my travel mug, which keeps it nice a cold and give it a few shakes every now and again.  As the cubes begin to melt that break into tiny pieces just as if it were blended.

Yummy!!!

Iced Coffee

I am a lover of coffee, and in the summer I just LOVE iced coffees...........but I don't like to pay the outrageous price some places charge or the mixes you can get, which are full of chemicals.

So, this year I set out to make my own.  After doing some research on the internet and some experimenting at home I came up with my recipe for Iced Coffee.

ICED COFFEE

1/3 cups of cold brew coffee concentrate
1 tablespoon Xylatol (or any sweetener of your choice)
1 cup unsweetened coconut milk beverage, almond milk (any milk of your choice)
2 cups ice


To make the cold brew coffee concentrate you can either use one of the many fancy machines out there or you can add 1/3 cup coffee grounds to 1.5 cups cold water - stir and let sit for 12 - 24 hours.  

  • Now the reason for using a cold brewed coffee, is  that it is less acidic than using hot brewed coffee that has gone cold.  So, if you have a sensitive stomach, you will want to use the cold brewed coffee.  

Strain the coffee through a coffee filter and store in a resealable container.  This will keep in the fridge for up to one week or you can portion it off and freeze it -- this is what I like to do.

Now just assemble in the blender
  • 1/3 cup coffee 
  • 1 Tbls sweetener of your choice
  • 1 cup milk of your choice
  • ice
And blend.........and pour into a glass................and enjoy!!



This is incredibly delicious and extremely creamy.  

I love making these as I can control all the ingredients and the portions.  Like using Xylatol instead of sugar and coconut milk beverage instead of regular cows milk.  

And it is incredible cheap to make.

Feel free to adjust the ingredients to suit your personal taste.

Variations:
  • almond milk which was also very nice
  • freeze the concentrate in ice cube trays and plop them into a glass of coconut milk beverage
  • add Bailey's Irish Cream for a special grown up treat
  • add flavoring such as vanilla or caramel 

The sky is the limit with your options, so don't be afraid to experiment.

Sassy Water

Have you ever heard of Sassy Water?

Well, you definitely have to try this out.  Sassy Water is a drink specifically created by Cynthis Sass as part of "Prevention" magazine's Flat Belly Diet.  




It is so refreshing and good for you, you will want to drink it even if you do not follow the diet.  So here it is.....

Sassy Water
2 liters water (about 8 ½ cups)
1 teaspoon freshly grated ginger
1 medium cucumber, peeled and thinly sliced
1 medium lemon, thinly sliced
12 small spearmint leaves.

Step One:
Wash cucumber, lemon and spearmint leaves.

Step Two:
Slice cucumber ad lemon in thin slices and add to your water pitcher. 
NOTE:  if using field cucumber peel first, if using english cucumber you can leave the skin on if you want


Step Three: 

Tear the spearmint leaves and add them to the pitcher.  Tearing them will release more flavour

Step Four:
Peel the fresh ginger and grate directly into the water pitcher.



Step Five:
Fill with water.

Step Six:
Leave to steep overnight.

Step Seven:
Drink and Enjoy!

Beware!  This drink is highly addictive it is so good and refreshing you will be making a new batch daily!
