So, this year I set out to make my own. After doing some research on the internet and some experimenting at home I came up with my recipe for Iced Coffee.

ICED COFFEE
1/3 cups of cold brew coffee concentrate
1 tablespoon Xylatol (or any sweetener of your choice)
1 cup unsweetened coconut milk beverage, almond milk (any milk of your choice)
2 cups ice
To make the cold brew coffee concentrate you can either use one of the many fancy machines out there or you can add 1/3 cup coffee grounds to 1.5 cups cold water - stir and let sit for 12 - 24 hours.
- Now the reason for using a cold brewed coffee, is that it is less acidic than using hot brewed coffee that has gone cold. So, if you have a sensitive stomach, you will want to use the cold brewed coffee.
Strain the coffee through a coffee filter and store in a resealable container. This will keep in the fridge for up to one week or you can portion it off and freeze it -- this is what I like to do.
Now just assemble in the blender
- 1/3 cup coffee
- 1 Tbls sweetener of your choice
- 1 cup milk of your choice
- ice
This is incredibly delicious and extremely creamy.
I love making these as I can control all the ingredients and the portions. Like using Xylatol instead of sugar and coconut milk beverage instead of regular cows milk.
And it is incredible cheap to make.
Feel free to adjust the ingredients to suit your personal taste.
Variations:
- almond milk which was also very nice
- freeze the concentrate in ice cube trays and plop them into a glass of coconut milk beverage
- add Bailey's Irish Cream for a special grown up treat
- add flavoring such as vanilla or caramel
The sky is the limit with your options, so don't be afraid to experiment.
